We eat a lot of rice. A lot! Pressure Cooker Rice was one of the first things I made after I anxiously opened up my new pressure cooker. I was hooked! The rice was perfect. Light, fluffy, and just the right texture. Yes, my family gets a good dose of Pressure Cooker Rice.
Needless to say, regular white rice night after night gets a tad boring for the fam. And I certainly don’t want any rice revolts on my hands! Time to change it up a bit. Let’s hear it for Cilantro Lime Pressure Cooker Rice!
A hint of lime and a sprinkling of fresh cilantro turns our everyday pressure cooker rice into a dish fit for a special occasion (Cinco de Mayo anyone?) How to Make Cilantro Lime Pressure Cooker Rice
For the most consistent results use a parboiled white rice such as Uncle Ben’s. Put rice, water, salt, lime zest, and oil into the Pressure Cooker inner pot and stir. Secure lid, ensuring the steam release valve is turned toward sealing. Press the Rice function button. The time, pressure and temperature levels will be set automatically. Turn valve toward venting when the cooking cycle is complete. Remove lid. Fluff rice with a fork and fold in chopped cilantro. That’s it! So easy! And delish.
A Note About Types of Rice
Pressure Cooker Rice is one of those dishes that occasionally gives people a bit of trouble. It is important to note that the “Rice” function button is not designed for all types of rice.
I get the best results using parboiled white rice because it is less starchy than other types of white rice, so it is less likely to stick or burn in your pressure cooker.
If you are using a non-parboiled rice – long or short grain – I suggest you rinse the rice thoroughly before cooking it to remove as much of the starchy residue as possible.
You can certainly use brown rice for this recipe, as well, but the time and temperature is different, so do not use the Rice button that has preset times and temperatures. To modify for brown rice, add an additional 1/2 cup of water and use the Manual or Pressure Cook button. Set the time to 15 minutes, then naturally release for 5 additional minutes and you’ll be good to go!

And if you’re thinking about adding another Pressure Cooker to your collection, I just came across this amazing Mealthy MultiPot 9 in 1 Cooker. It will do everything you need (except the dishes… lol!)
- 2 cups white rice, parboiled is preferred
- 3 cups Water
- 1 tablespoon oilve oil
- 2 teaspoons salt
- 1 lime, juice and zest
- 1 bunch Cilantro, chopped
- Put rice, water, oil, salt, lime zest and 1/2 of the lime juice into the pressure cooker inner pot. Stir. Secure lid, ensuring the valve is turned toward sealing. Press the Rice function button. The time, pressure, and temperature will be automatically set.
- When the cooking cycle is complete, release the pressure by turning the valve toward venting. When all the pressure is released, remove lid. Add remaining lime juice and chopped cilantro and fluff with a fork. Serve as a side dish or incorporate into your favorite recipe.
