Everyone knows that s’mores are THE classic camping dessert. And for good reason – there’s just something about roasting a marshmallow over an open campfire then smushing a perfectly toasted hunk of gooeyness between two graham crackers lined with chocolate. Yep. Pretty awesome stuff. But sometimes you’ve gotta change it up a bit. And these No Bake Mini Cheesecakes are the perfect fun, easy, and delicious alternative to s’mores.

No Bake Mini Cheesecakes have their own special kind of yumminess. Rich, dense, sweet, tangy, luscious cream cheese filling nestled in a homemade, buttery, crispy graham cracker crust made and served up in individual cups are a fun, simple, and very tasty make-ahead dessert that’s perfect for sitting around a crackling campfire with friends and family.

Our plastic wine cups are just the right size for these elegant, individual no-bake mini cheesecakes. They’re light, portable, line up neatly in an RV fridge (or your food cooler) and are just the right size to grab and go! Not only that, there’s plenty of room to top off your cheesecake with any number of wonderful toppings (I’m thinking raspberries, strawberries, or perhaps a drizzle of caramel or chocolate…? Mmm! Delicious!)

How To Make No Bake Mini Cheesecakes

Drizzle melted butter into finely crushed graham cracker crumbs and add some sugar. Mix well. Press into the bottom of the plastic wine cup (using the bottom of a shot glass makes this super easy) and refrigerate for 15 minutes. Blend softened cream cheese, sweetened condensed milk, lemon juice, and vanilla until creamy. Spoon mixture onto chilled crust and refrigerate at least 4 hours. Serve with topping of choice! And you certainly don’t have to wait until next time you go camping to enjoy these! Any old occasion will do (or no occasion at all…) Just make ’em and enjoy! I prefer mine with no topping at all – well, maybe a little extra sprinkling of crushed graham crackers. But the fresh strawberries and chocolate drizzle are a hit with everyone else. Ingredients

Graham Cracker Crust

  • 1 1/2 Cups Crushed Graham Crackers
  • 1/4 Cup Granulated Sugar
  • 6 Tablespoons Melted Butter

Cream Cheese Filling

  • 8 Ounces Cream Cheese, Room Temperature
  • 3/4 Cup Sweetened Condensed Milk, Approx. 1/2 of a 14 oz. can
  • 2 Tablespoons Lime Juice
  • 1/2 Teaspoon Vanilla extract
