Grilled Chicken Sandwich Recipe for Camping
We know better. We really do! But sometimes while out camping there are some things we “forget” to do. (Especially after slipping into a “food coma” after devouring this delicious Grilled Chicken Sandwich Recipe that’s perfect for Camping!) And sometimes those forgotten things can lead to a near disaster!
There’s nothing like a delicious, satisfying, mouth-watering, juicy and flavorful dinner as you’re sitting at your campsite enjoying the sights and sounds of nature. And that’s exactly what you’ll get with this Grilled Chicken Sandwich Recipe! And that’s also why we had some leftovers – these things are so stick-to-your-ribs-filling that I couldn’t finish mine, so I threw the last half in the trash can and finished the night out with a nice glass of wine by the campfire. A perfect ending to a perfect evening. Only that wasn’t quite the end…

Dinner, drinks, and the campfire had been at my sister’s campsite, so when it was time to call it a night I strolled back to mine and crawled into bed for a peaceful night’s sleep, safely tucked away in our camper. My sister’s night wasn’t so peaceful. In the wee hours of the morning she heard a loud banging just outside her RV. She immediately knew what it was. She opened her camper door and her fears were confirmed – she was face to face with a big brown grizzly bear rifling through the trash. Yes, the trash we left out. Yes, the trash everyone says DO NOT leave outside at night when you’re in bear country. And we were smack in the middle of bear country.
She wasn’t sure whether she should quietly close her camper door and lock it for safety (that would have been my pick…), stare the bear down (kind of intimidating to do that!), or wave her hands over her head and make noise so the bear thought she was bigger than he was (uh… not what I could have done). She chose to make herself “big” and hoped to scare him off. Well, it worked! Sort of… He did back down and start to walk away. Then as if on second thought he turned back toward my sister, her camper, and most importantly the trash can. He wanted one more thing.
She watched as he carefully rifled though the trash and pulled out one item. The Grilled Chicken Sandwich! Yep, the grizzly came back for the half sandwich that I had thrown away. He grabbed it, gave her one more long stare down for good measure, then bounded down the cliff off into the wilderness. That must be one heck of a Grilled Chicken Sandwich Recipe!
How to Make The Easiest Campsite Grilled Chicken Sandwich Recipe:
The beautiful thing about this Grilled Chicken Sandwich Recipe is how easy it is to pull together – especially at a campsite. Just bring a one pound pack of chicken tenders, some mayo, a ripe avocado, a pack of swiss cheese, and 4 ciabatta rolls. Heat up your grill (I use a portable propane grill), toss the tenders on the grill, laying two tenders side by side (you’ll have 4 sets of two and each set makes one sandwich), season with salt and pepper, flip each set of tenders after 3 or 4 minutes, top each set with a slice of swiss cheese, and cook for another 3 minutes.
Make sure to close the lid to the grill when you’re cooking!! It is far more efficient that way. While the cheese is melting on the tenders, toast your ciabatta rolls directly on the grill. The rolls and chicken will be done at the same time. Top with mayo and avocado and you’ve got yourself an amazing, juicy, hot and flavorful nearly-gourmet grilled chicken sandwich right at your campsite! It will please even your pickiest eaters. Just be prepared for the grizzlies to come after your leftovers! (If you’re looking for an equally easy side dish to serve with the sandwiches, try this campsite steamed broccoli!)
P.S. One quick helpful note on Portable Propane Grills. I’ve used many kinds and many brands and by far my favorite is this Weber Q 1200! Grilled Chicken Sandwich Recipe for Camping
Ingredients
- 1 Pound chicken tenders
- 1 Ripe Avocado, Pitted and Sliced
- 4 Slices Swiss Cheese
- 4 Tablespoons Mayonnnaise
- 4 Ciabatta Rolls, Sliced
- Salt and Pepper, To taste
Instructions
- Heat up the grill to 400 degrees. Salt and pepper chicken tenders. Lay tenders on the grill (in groups of two tenders, touching side by side. You'll have four sets of two tenders, each making one sandwich). Close grill and cook for 3 or 4 minutes on the first side.
- Flip each set of tenders to the other side. Top each set of two tenders with one piece of swiss cheese. Place Ciabatta rolls, cut sides open on the grill to toast. Close the lid for another 3 or 4 minutes. Check to make sure the chicken is fully cooked, and no longer pink in the middle. Remove each ciabatta roll and put one set of tenders into each roll.
- Spread mayonnaise onto the inside top of the rolls. Add sliced avocado on top of the chicken. Enjoy your campsite gourmet grilled chicken sandwich!
