The Easiest of all Camping Breakfast Ideas – Scrambled Eggs!

Sometimes it’s easy to overlook the obvious when searching for a solution to a problem. Such is the case with me and scrambled eggs and camping. If you’re anything like me, you put a ton of effort into making sure your camping trips are fun, relaxing, and full of awesome camp food! And breakfast is a key component. I’ve come up with all kinds of camping breakfast ideas – yogurt parfaits, biscuits and sausage gravy (yum!), and I’ve even fallen into the Pop Tart trap occasionally (these actually make for a fun camp breakfast every once in awhile). But eggs always presented a bit of a problem…

There’s no question that people love scrambled eggs! Especially when sitting out by a morning campfire sipping on a rich, hot cup of coffee. But bringing eggs creates a bit of a dilemma. They crack! And they make a mess. My first attempt at bringing eggs was a disaster. I carefully put a carton of eggs near the top of the food cooler, and ever so gently packed the remaining few items around the carton. Well, my friends, things shift when getting bounced around in the back of the truck or trailer. Yes, even carefully packed items surrounding a fragile carton of eggs! And when the shifting occurs, eggs break! They break and they ooze all over everything else in the cooler. And so it goes…Camping Breakfast Ideas Ingredients with watermark

So, How Exactly DO You Bring Eggs Camping?

Needless to say, after the crushed egg incident, I was a little gun-shy about the whole egg thing. I even bought one of those hard plastic egg carrying things that’s specifically designed to bring eggs camping. Nope! Those are great if you buy really small eggs. I don’t. It was years (yeah, I’m a little slow sometimes) before I figured out how to take eggs camping, scramble up some amazing ham-filled, cheese-oozing, fluffy eggs, and have NO mess to clean up! Scramble them first! Duh! This is truly one of my favorite Camping Breakfast Ideas!

Here’s how it goes: The night before you go camping, scramble up a dozen or so eggs. Add diced ham, a little shredded cheese (Velveeta Shreds work well), salt and pepper. (Throw in some sliced green onion if you really want to be fancy). Put it all into a large zip top bag, seal well, and toss into your freezer. Place the frozen bag of eggs into your food cooler when you’re packing it up before you hit the road and it will be ready to go the next morning! Just heat up a pot of water and put the sealed zip top bag into the boiling water for about 10-15 minutes, gently jostling the bag around occasionally to ensure even cooking. The eggs will turn light, fluffy yellow as they cook. As soon as you see that the entire contents of the bag are light yellow, they’re done! Serve them up and toss out the bag. Couldn’t be easier. Couldn’t be better. Couldn’t be more of a snap to clean up. Like I said – one of the very best Camping Breakfast Ideas!

So pull out the roadmap. Pick a beautiful spot near a lake, or deep into the forest, or right on the edge of the sand near the ocean, scramble your eggs, pack your cooler, and hit the road. Camping Breakfast Ideas? These Scrambled Eggs Are SO Easy!

Yield: 4
Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes

Ingredients

  • 12 Eggs
  • 1 Cup Shredded Cheddar Cheese
  • 1/2 Cup Diced Lunch Meat, Ham or Turkey
  • 2 green onions, Sliced
  • Salt and Pepper to taste

Instructions

  1. The night before heading out camping, scramble eggs in a medium bowl. Add cheese, lunch meat, green onions and salt and pepper. Pour into a large gallon sized zip top bag (freezer bag) and freeze. Pack zip top bag of eggs in cooler when you head out camping.
  2. When at campsite, fill medium sized pot 2/3 full of water. Bring to a boil. Submerse zip top bag of eggs and other ingredients into boiling water.
  3. Return water to a simmer. Using tongs, move bag around occasionally while cooking to ensure even cooking, paying particular attention the the contents in the center of the bag to make sure all contents get evenly cooked.
  4. Simmer for approximately 10-15 minutes (depending on how cold/frozen the bag is). When the contents are light yellow and fluffy throughout, the eggs are fully cooked. Remove bag from boiling water very carefully. Open bag carefully and pour eggs onto large plate. Fluff with fork and serve immediately. Enjoy the rest of your camping day!
