Is there anything that announces the arrival of summer better than fresh, ripe, red, juicy watermelon? And is there anything that goes better with summer than camping? I’m going with no, and no! Summer is here! And so is fresh watermelon! You know what all that means? It’s time for fresh Watermelon Feta Salad with Blueberries! One of my very favorite summertime snacks!
By now you all know that I don’t have tons of childhood memories. I can’t explain it (especially since I had a really great childhood!) It’s just the way it is. But one thing I definitely remember is watermelon in the summertime. If we had an outdoor party, we had watermelon. If we were celebrating any one of the awesome summertime holidays, we had watermelon. Picnic? Watermelon. Grandparents over? Yep, you guessed it – sweet, juicy, awesome watermelon. And now that camping is in our repertoire…. fresh summer watermelon is a must!
There’s no doubt that a simple, cut up watermelon is amazing all by itself. But I love to kick it up a notch with this Watermelon Feta Salad with Blueberries! Summertime fruit with just a bit of salty, healthy, rich Feta cheese crumbles. Now that’s what I’m talking about! You’ve heard my motto before… Keep it simple. Keep it tasty. Keep it easy to clean. I keep all those in mind when I’m planning a camping meal or camping snack. And by far the easiest way to keep this one simple is to cut up the watermelon before you head out to your campground, then throw it all together once you’re there. There’s just no easy way to lug a huge, round watermelon out camping, so cut it up and be done with it. Store it in a zip top bag and it will take up almost no space in your fridge or cooler. Now let’s get to it!
How to make Watermelon Feta Salad with Blueberries
- Slice watermelon crosswise into 2 inch thick discs. Cut each disc in half so you have a half-moon shape. Cut the rind off then cut the flesh into 2-inch squares. This is definitely the easiest way to cut a large watermelon. I also use a melon baller at times (I like this one). This takes longer but is very pretty when it’s all said and done. Put in a zip top bag and bring camping.
- At your campsite, toss together cut watermelon, a pint of fresh blueberries (can also use frozen, just thaw them first. See my post about frozen blueberries here), 4 ounces of crumbled Feta, a couple sprigs of chopped, fresh mint leaves, and drizzle with a bit of white wine vinegar and honey. (You can even omit the vinegar and honey if you don’t want to bother. It’s great with it, but it’s also great without!) Mix well and dig in!
All done! This Watermelon Feta Salad with Blueberries is one of the easiest, freshest, and most enjoyable camping snacks or side dishes! And you don’t need to go camping to enjoy it – any outdoor party will do! (Yes, you can even take it indoors if you must, but you just might be missing out on everything the great outdoors has to offer!)
