Summertime. Filled with sunshine, vacations, the outdoors, and a bountiful supply of fresh fruits and veggies – the tomatoes are perfect, the watermelon is super sweet, and the plump, rich blueberries are bursting with fresh summertime flavor. The little purple-blue morsels that are exploding with sweet tanginess practically scream blueberry smoothie! What could be better in a smoothie than fresh, juicy, ripe blueberries? Well… apparently, frozen, packaged ones. Really.
My creative and talented mother ran a very successful bed and breakfast out of my parents’ home for years. And she did it right! The gorgeous home was only outdone by my mother’s flair for beautiful linens, exquisite decor, and mostly the exceptional breakfast extravaganzas. Her guests awoke to the smell of hot-out-of-the-oven Dutch Babies served with a plethora of fresh fruits, granola, and whipped cream, strong coffee, and my mother’s Southern charm. The home was graced with guests that ranged from concert pianists to executives from Seagram’s, to Suzanne Somers (yes, really). The guests loved chatting with my mom. She told interesting stories. They told interesting stories.
One guest in particular stayed up till the wee hours of the morning exchanging interesting life anecdotes with my mom. He was the owner of a very large and very successful blueberry farm from back East. He LOVED his blueberries. He knew every single thing about them. He shipped blueberries to nearly every large retailer in the country. And out of every detail my mom learned about blueberries, the most surprising tidbit was that the very best blueberry flavor comes from frozen blueberries! The freezing process condenses and intensifies the blueberry flavor, giving each frozen berry more bang for the buck than its fresh counterpart. Who knew? Well, now I do so the star ingredient for my Coconut Blueberry Smoothie is the frozen blueberry. Go figure.
Trying to stick with the summertime (a.k.a vacation) theme, I decided to throw in some coconut milk for good measure. And trying to stick with something healthy, some whey protein powder was in order. Whirl it all together and you get an amazing, creamy, healthy meal or snack that will be sure to make you appreciate the waning days of summer. (And if you really want to enjoy it, you could splash in a healthy dose of coconut rum… just sayin’!)
