They needed protein. And fat. In a hurry. That’s what happens when kids (20-something kids) enjoy themselves just a little too much out at music festivals. Country Thunder Music Festival in this case. Thank God for Instant Pot Hard Boiled Eggs.
So… all of my loyal followers know that the Country Thunder music festival is a huge deal for us. We pack up our RV, both of my sisters’ RVs and pop-up camper full of food, fun, and drinks (lots of drinks!) and head out for 5 glorious days of pack-em-in-like-sardines elbow to elbow dry camping so we can enjoy friends, family, and tons of great live country music! (I’m well aware that the aforementioned scenario makes more than a few of you cringe. But trust me…. it’s great fun!) Back to the topic at hand – fast and easy protein. Here’s the thing about hard boiled eggs. They’re delicious, they’re cheap, they provide an immediate source of nutrients and alcohol-absorbing fat (so they’re the perfect go-to snack anywhere people tend to overindulge a bit on alcohol, such as music festivals), and they’re the perfect size to take almost anywhere. But here’s the problem – peeling them! It seems that no matter how “perfectly” they’re cooked, the peeling process turns into a battle between your fingernails and the thousands of little cracked bits of shell that the egg seems to be holding on to for dear life.
Instant Pot hard boiled eggs to the rescue. I am definitely not one of those “I have every new kitchen appliance” people. In fact I almost never even use a microwave. So when the whole Instant Pot craze started to catch on, I was skeptical at best. Well, folks, I was wrong! This handy little appliance is truly amazing! I’m sold! Hooked! All in! It’s fast, simple, easy to clean, and actually puts out some great meals. But what really got me hooked was how amazing the Instant Pot hard boiled eggs turn out. Not only are they perfectly cooked, the shell pretty much slips right off! And I’m not exaggerating. I’ve cooked dozens of hard boiled eggs in this thing and I’ll tell you that each egg can be peeled in about 5 seconds! Amazingly perfect. Every. Single. Time.
So I added Instant Pot hard boiled eggs to this year’s Country Thunder menu. And I’m glad I did! Nearly every time the kids (again… kids in their 20s!) would meander back to our campsite, they were usually in need of a quick, high-protein, high fat, alcohol-absorbing snack. And when I say quick, I mean quick! I cooked and peeled them ahead of time (it hardly took any effort at all), kept them in a zip top bag in the cooler or fridge, and passed them out one by one as needed. Here’s how easy it is:
How To Make Instant Pot Hard Boiled Eggs
- Put a cup of water in the bottom of the inner pot of the Instant Pot
- Place eggs on a rack or steamer basket inside the Instant Pot and lock lid (make sure the release valve is closed)
- Set timer to “manual” for 8 minutes
- When the timer goes off, turn off Instant Pot and open the quick release valve. Cool, peel, enjoy!
I cannot stress enough how easily these things peel! It makes making hard boiled eggs a real pleasure. It also makes me the hero as I effortlessly pass around these wholesome, delicious, morsels of healthiness to those in need! I can see the gratitude in their eyes. It brings a smile to my face.
