Yes, it’s true… the Instant Pot puts out some a-ma-zing dishes – stick-to-your-ribs-ribs, creamy mac and cheese, and even the ever-popular chocolate lava cake (don’t get me started on how fantastic that one is!). All of these are great examples of fabulous comfort food. But believe it or not, it really is possible to get healthy, delicious, on the lighter side of things food, as well. When we’re out camping, I always try to make a variety of meals that will please everyone – a little rich and hearty, a little sweet and tasty, and even a little light and healthy. It’s all about the balance. (Yes, we do also manage to balance beer and wine and cocktails also… 😉 ) And the Instant Pot has made finding this balance oh so easy! My go-to for healthy is this Instant Pot Salmon. It most definitely fits my RV and camping cooking motto – Keep it Tasty. Keep it Simple. Keep it Easy to Clean. The whole meal comes together in less than 10 minutes and there’s virtually no cleanup!

How to Make Honey Balsamic Instant Pot Salmon
Blend equal amounts of honey and balsamic vinegar and brush onto salmon filets. Sprinkle with salt and pepper. Place trivet into Instant Pot inner pot and add 1 cup water to the pot. Place salmon filets skin side down on top of trivet. Secure lid, turn valve to sealing, and pressure cook on high for 3 minutes. Release pressure and remove with a spatula. Drizzle with additional honey balsamic mixture and enjoy!
If you’re really lucky, then you’re RVing in Alaska and catching your own salmon! What a dream!! Just prep salmon filets as you normally would, then pop them in your Instant Pot! (And send me a picture of your beautiful Alaskan adventures!) If you’re like the rest of us, any salmon filet will work, but of course wild is always the best. It’s just tough to find sometimes.
Serve this with a little rice and some of these Brussels sprouts and you’ll actually look forward to “healthy night” from the Instant Pot. Who knows?? This Honey Balsamic Instant Pot Salmon may become a family favorite!
