Easy Camping Dinner – Chicken Quesadilla

The drive is usually a bit stressful and often takes much longer than you anticipated. But the minute you pull into that spot of nature you’ve picked out as your campsite for the next few days, weeks, or even months, it’s all worth it! Everyone’s mood lifts, spirits soar, and smiles adorn faces as they pile out of the car/truck and take a big breath of the clean, fresh smell of the great outdoors. The adults usually grab a cold beverage and a camp chair while the kids run out to explore the surroundings. And then the inevitable happens… “What’s for dinner? I’m starving!” The sun is starting to set, creating the beginnings of a glorious evening sky. Your adult beverage of choice is only half gone and the last thing you want to do at this moment is head to the camper to make dinner. And that’s why you need this incredibly easy camping dinner – the Grilled Chicken Quesadilla.

The best part of this Grilled Chicken Quesadilla (other than the fact that it only takes about 10 minutes to make) is that you get to prepare dinner on your portable grill, remain outdoors, and enjoy everyone’s company! It’s a win-win-win! Five minutes of prep at your house before you go, and 10 minutes at the campsite will produce one of the best and easiest camping dinners. You’ve probably heard me say it, but I’ll say it again… I LOVE my Weber Q2200 portable grill!!

The Grilled Chicken Quesadilla – Such an easy Camping Dinner!

  • At Home: Mix shredded canned chicken with salsa and 1/2 of a minced onion and store in a zip top bag.
  • At Campsite: Heat grill, place a few (depending on the size of your campsite grill) tortillas flat on the grill. Add shredded cheese on 1/2 of each tortilla and top with the shredded chicken mixture. Fold tortilla in half, cook for 3-5 minutes, then flip and cook the other side for another 3-5 minutes. Instructions
  1. Turn the grill on to medium-high heat and close the lid. In a large bowl, mix chicken cheese, 1 cup of the salsa, and onion until well blended.
  2. Lay two tortillas open flat on the grill and place ¼ of the chicken mixture onto one half of each tortilla. Fold the other half of the tortilla over onto the chicken mixture and press down with the back of a spatula. Close lid and cook 3-4 minutes, until the cheese begins to melt and there are char marks on the bottom of the tortillas. Flip the quesadilla and cook the other side 2-3 minutes. Remove and slice each quesadilla into thirds. Repeat for the other two.
  3. Top with additional salsa, sour cream, cilantro and tomatoes.
