It’s in my hot little hands and it looks awesome! Yep… the hard work, long days of recipe planning and testing, and more taste tests than I can remember finally all come together in my very first cookbook – Cooking with Your Instant Pot® Mini: 100 Quick & Easy Recipes for 3-Quart Models! You all know by now how much I love my Instant Pot(s). It takes a lot to get me to like a kitchen appliance… well the Instant Pot is all that – and more! So when the Mini came out I knew it was the perfect addition to our RV adventures. It takes up very little space, but can put out some awesome meals for 2-4 people. No doubt it’s perfect for the RV.

The more I used it, the more I loved it. But there was only one problem – most recipes out there are made for the larger Instant Pot models. Many people simply cut those recipes in half for the Mini. Well, my friends, that doesn’t always work. Plus who really wants to do all that math? Especially when you’re out camping (maybe a drink or two in… just sayin’!)

So I contacted Instant Pot and told them I wanted to write a cookbook for all my RV/Instant Pot Mini peeps. They LOVED the idea. And so it began. Conference calls, interviews with publishers (yes, several were clamoring to get their hands on this book), and tons of emails later, Cooking With Your Instant Pot Mini was born! The publishers are heavily supporting this book (that’s a good sign!) and they are thrilled that I’m doing an Instant Pot Cookbook Giveaway for you guys.
