Grilled Pork Loin Stuffed Baked Potatoes

I needed an easy dinner. A really easy dinner. Those of you who saw me on my very first Facebook Live episode here know why. I had been planning an awesome long weekend getaway to the cabin up in northern Arizona. Twelve people. Four days. That’s a total of 12 meals for a dozen people! That’s a lot of planning and a lot of food for a lot of meals in a row. So the night before we left, I needed a really easy meal. Grilled Pork Loin Stuffed Baked Potatoes to the rescue!
I know I’m not the only one who needs a really fast, really easy, really tasty no-brainer meal on a regular basis. So this post is for all of you in the same boat! Being a food writer is a great gig. I get exposed to all kinds of food, kitchen gadgets, and products I may not have otherwise known about. Such is the case with this awesome Smithfield Marinated Fresh Pork. Sometimes a product comes around that just makes me smile. Smile at the ease of it. Smile at the deliciousness of it. Smile at how much easier it makes my life! Yep – I found that product when I found Smithfield Marinated Fresh Pork.
I love all things pork – bacon, sausage, chops, pulled, etc… you name it, I love it! And I have no problem putting in the work to make it tasty (like when we made these fall-off-the-bone-mouth-watering ribs). But I was SO happy to find the Smithfield Marinated Fresh Pork for those times when I don’t have the time to put in the time! And the variety of flavors is amazing – I’m talking garlic and herb, portobello mushroom, mesquite, and my personal favorite, applewood smoked bacon!! Yum!) These are great cuts of meat that Smithfield® pre-marinates and packages in very convenient vacuum sealed packaging, easily found at your neighborhood Walmart store! And when I say they’re absolutely perfect for grilling, boy do I mean it.
Just heat up the charcoal grill, open the package, and toss that bad boy on the sizzling grill. Ten to twelve minutes later, you’ll have a juicy, flavorful, tender, grilled to smoky perfection pork loin. A delicious dinner in about ten minutes! It doesn’t get much easier than that! So for that night before our fantastic long weekend adventure when I needed something no-brainer-easy for dinner, the answer was clear. Grilled Pork Loin Stuffed Baked Potatoes. Throw your russet potatoes in the oven for an hour (or 10 minutes in the microwave), heat up your charcoal grill, steam some broccoli (click here to see how to steam broccoli on your grill) at the same time you’re grilling the Smithfield Marinated Fresh Pork, and voila – dinner is done! Open up that baked potato, toss in a pat of butter, a handful of fresh steamed broccoli, sprinkle with some shredded cheese, and top with juicy, grilled, diced Smithfield Marinated Fresh Pork and a dollop of sour cream. Dinner served. Problem solved.
Grilled Pork Loin Stuffed Baked Potatoes
Ingredients
- 4 Russet Potatoes, Baked in oven or in microwave
- 4 Tablespoons butter
- 1 Pound Smithfield Pork Loin
- 2 Crowns Broccoli, Chopped into large chunks
- 1 Cup Shredded Cheddar Cheese
- 1 Cup sour cream
Instructions
- Heat oven to 425 degrees and place washed potatoes into oven for one hour (or put them in a plastic bag in the microwave for 10 minutes).
- Heat charcoal either directly in the kettle of the grill or using a charcoal chimney (my preferred method) until very hot (usually 20 minutes to heat up). If you'd prefer, you may also use a gas grill). Oil grill grates using a paper towel saturated with vegetable oil. Use long tongs to wipe the grill with the paper towel soaked in oil! Cook pork loin approximately 3-4 minutes per side (4 sides) until cooked through then remove from grill. Make sure to keep the grill covered while cooking.
- Using two layers of aluminum foil, create a pouch for the chopped broccoli. Form into the shape of a large bowl, then add the broccoli and 1/2 cup of water and seal the pouch. Place on top of charcoal grill at the same time the pork goes on the grill.
- Remove pork and broccoli from the grill. Carefully open the pouch of broccoli. Dice grilled pork. Slice open baked potatoes and add butter, broccoli, cheese, diced grilled pork, and sour cream. Enjoy your easy night of cooking!
I fund the pre-marinated meats are very high in sodium.
Hey DiB! Thanks for the comment. I’m not sure how you define “very high” in sodium, but I suppose that’s a personal range for most people. I personally don’t have high blood pressure, so it’s not something I think about. For anyone who does have high blood pressure, they should always take sodium into account. Having, said that, since this Smithfield Marinated Pork only has 18% of the daily recommendation for sodium, I personally wouldn’t consider that “very high in sodium.” Thanks again for your comment. 🙂
Wow, these baked potatoes sound delicious! I don’t envy you for planning meals for 12 people for 4 days…but I bet the cabin getaway was super fun. Great chance to spend time with friends enjoying delicious food…like these stuffed baked potatoes! #client
