“I’m in a rut.” “I can’t think outside the box.” “I love bacon and eggs but there’s got to be something more.” “Help!” I’ve heard every one of these from various members of the many camping and RV Facebook groups I frequent. I love these groups. I turn to them when I need help, guidance, advice, and occasionally a good laugh. And sometimes they turn to me for help…. Help with camp cooking. The struggle this week seemed to revolve around breakfast. It really is easy to get stuck in the bacon/sausage/eggs routine when you’re out in the middle of nowhere enjoying the peacefulness of the great outdoors. In all honesty, it’s pretty tough to beat the fabulous sound of sizzling bacon and the smell wafting through the campsite as you’re sipping your morning cup of Joe. But… we do all need a change up now and again. And, of course, we want to Keep it Tasty. Keep it Simple. Keep it Easy to Clean. (shameless plug of my motto.) It takes almost no work to serve up this beautiful Yogurt Parfait – bring along a little fresh, ripe fruit (I love ripe summertime strawberries and fresh blueberries), your favorite crunchy granola, and whatever yogurt strikes your fancy. (I like creamy vanilla!) By the way… I’ve got a secret for you if your strawberries aren’t quite ripe to perfection. Mix up 2 tablespoons of sugar with 2 tablespoons balsamic vinegar in a small dish. Drizzle that wonderful concoction onto your sliced strawberries and let marinade for an hour or so. You’ll be amazed at the flavor!Yogurt Parfait with Strawberries e

Assembly of The Breakfast Yogurt Parfait

  • Spoon 2 Tablespoons yogurt into a clear glass or plastic cup (I like these plastic wine tumblers)
  • Add a layer of crunchy granola
  • Layer strawberries then blueberries (or fruit of your choice)
  • Top with more yogurt and another layer of granola
  • Repeat until your cup is full of wonderful yumminess!

As much as we all love bacon, sausage, and eggs, it really is nice to have a refreshing change up for your camping breakfast. And this one is more like eating dessert for breakfast (but it really is healthy. I promise!) The Yogurt Parfait - Change Up Your Camping Breakfast Routine

Ingredients

  • 32 Ounces Quality Yogurt
  • 2 Cups Granola of Choice
  • 2 Cups Strawberries, Sliced
  • 1 Pint Fresh Blueberries

Instructions

  1. In a clear cup or glass layer 2 Tablespoons Granola, Yogurt, and fruit. Repeat until cup is full!
