Yes Your Camping Snacks Can Include Guacamole!
Sometimes you throw a tent in the back of your car, grab a cooler, a six pack, and a pack of hot dogs and head out camping. Sometimes you plan for days, carefully pack up the camper with everything you can think of – camp chairs, camp tables, shade structures, bug repellant, anti-itch cream (just in case you brought the cheap bug repellant), 5 kinds of beer, 3 kinds of soda, filtered water, bloody mary makings, and of course enough camping snacks to feed an army!
Every once in a while, though, too much planning can be a problem. My wonderful, thoughtful husband took planning to a whole new level when he purchased a towing platform (after weeks of research) that connected to our hitch in between the Jeep and the camper. It was a great idea – we could put the generator, gas cans, and any other dirty, smelly items on it to keep them outside. Great idea! Great idea gone bad. We had no idea that putting that platform between the car and the camper (as it is intended) would create a massive wind tunnel that nearly flipped the Jeep and the camper!
There I was… driving up north to escape the valley’s 115 degree heat, getting a head start up to a piece of paradise in the pine tree-laden mountains so my hubby could join me as soon as he got off work. I drove the Jeep and the camper (complete with the towing platform that will forever be called the aluminum deathtrap). I was passing a very large boat (I’m pretty sure it was a yacht!) being towed on my right, when a massive, very fast 18 wheeler whizzed by me on my left. That was all she wrote! My camper went into a fishtail pattern that was out of control crazy! All the cars and trucks behind me slowed down to a crawl and pulled off to the side (yes, even the yacht). You know you’re in trouble when the whole freeway pulls aside for you! My instinct was to slam on the brakes. But my brain reminded me that I needed to accelerate into the whipping fishtail pattern. Tough to do. But I clenched the wheel and hit the gas. It took about a half a mile, but ever so slowly my camper fell in line with the Jeep. Catastrophe avoided. Barely. The best laid plans…
Two white-knuckle-hours later, I made it to our bit of heaven on Earth. I’ve never been so relieved to get anywhere! And after a drive like that there’s nothing that hits the spot more than some great camping snacks (and a really cold beer!) Some snacks are easy but boring (bag of chips, string cheese), some are a bit more of a challenge but delicious (prosciutto wrapped asparagus), and some hit the sweet spot in between – a piece of cake to prepare and scrumptious to eat! That’s what you get with this homemade guacamole! With a little planning (just a little), this luscious, rich, velvety family favorite can be served at your campsite in less than two minutes! Serve it up with some lightly salted tortilla chips and you’re all set! No over-planning needed.
Camping Snacks – Homemade Guacamole!
The key to this rich, fresh, creamy with a hint of heat homemade guacamole right at your campsite is to prepare some of it ahead of time. The combination of minced red onions, pungent garlic, a hot jalapeño, fresh tomatoes and cilantro all blended up with perfectly ripe avocados makes for one of the very best camping snacks. And it’s a breeze to pull off! Just mince everything except the avocados before you leave for your camping trip. Put it all in one zip top bag and bring it along with 3 ripe avocados. When you arrive at the campsite (hopefully your trip is a bit smoother than mine), cut open the avocados and smash them together in a bowl with the ingredients in the zip top bag. Add a bit of fresh lime juice and you’ve got some amazing homemade fresh guacamole – right at your campsite! Planning without over planning. That’s the secret!

your recipe is delish! However I find guacamole tastes much better after being refrigerated and served cold. your recipe calls for it to be made just before eating and I honestly think it tastes better if you make it ahead of time. Just several hours so it’s cold!
Thanks Julie! I actually prefer mine room temp, but I do know lots of people who like it cold, so for sure go that way if you want! 🙂
LOVE good guac. Dear husband and I are camping as often as possible – at least a trip a month – and we’re on a few FB camping/trailering groups. I’ve been reading things from those groups this morning and still haven’t had a cup of coffee, so forgive me, but when you said “a pack of hot dogs” I REALLY thought “who in their right mind would take a pack of hot dogs with them camping? I have a problem managing ONE dog, so imagine a pack of them! And HOT? I can’t stand being hot when camping, so a whole pack of dogs panting… OH! WAIT! ha ha ha, she means FOOD!” DH is making the coffee now.
Lol!! I never thought of a pack of dogs that way… Funny! I hope your coffee was good! We’re heading off tomorrow for a 12 day excursion to Colorado and South Dakota. Coffee is the first thing I packed! 🙂
