  1. Add brewed coffee, milk, sugar, cocoa powder, and peppermint extract to the Instant Pot inner pot. Whisk very well, incorporating all of the cocoa powder into the liquid. Secure lid, turning the valve toward “sealing” and press pressure cook. Set the time for 1 minute.
  2. When the cooking time is complete, allow the pot to naturally release until all pressure is gone, or perform a “slow release.” (Very gradually turn the release valve little by little until all of the pressure is released.) This will prevent liquid from coming through the release valve.
  3. Remove lid, scrape sides and stir. Add rum and stir thoroughly. Leave pot on Keep Warm and serve with whipped cream, crushed peppermint, and mini candy canes. Happy Holidays!
