Shredded Beef Sliders – Perfect Game Day Food!

Sometimes you’ve gotta pull out the big guns to get everyone’s attention. And these Shredded Beef Sliders are really big guns (figuratively speaking, that is)! As you all know (if you read my Monkey Bread post), we have a TON of people in town for the holidays. Some have stayed at our house, some at my sister’s, and others have been RV driveway camping. But all gather together for mealtime! It’s totally awesome… 25-35 people for dinner Every. Single. Night. for two-plus weeks! And of course this time of year there are awesome game day sports being watched and enjoyed by everyone on any one of my sister’s 17 TVs (yes, you read that right… 17 TVs. Needless to say, it can sometimes be a bit difficult for me to get everyone’s attention when the meal finally hits the table. (Like that time I made seared Ahi tuna with quinoa, or when I made a spiralized veggie stir fry… Both delicious, but not exactly the kind of food that will tear people away from an exciting playoff or bowl game).

And then there’s these Shredded Beef Sliders. Now these get everyone’s attention!! I mean really… who doesn’t love tender shredded beef that’s been braising for hours in a lovely pilsner beer (I use Warsteiner) piled high on pillow-y soft and fluffy Pepperidge Farm® Slider Buns (these are really awesome), topped with sliced, smoky Gouda cheese and crunchy fried onions, drizzled with a bit of leftover au jus?

Yes, indeed, everyone loves them! You should see how quickly the line forms at the kitchen island when I make these and proudly announce “dinner’s ready”! It’s nothing short of a miracle. These can pull folks away from even the most exciting, edge-of-your-seat, closest of all playoff games! And don’t forget to serve them with some ice cold pilsner beer (like Warsteiner). Yum. And to all you campers and RVers out there who may just be camping during some of the playoff games…. have no fear! The flavorful, juicy shredded beef can be easily made ahead of time and packed in zip top bag to bring on your camping trip. While at the campsite, just heat up the beef, and serve with Pepperidge Farm® Soft Sliders right at your campsite! Just make sure to bring your streaming electronic device of choice so you don’t miss a single play. 🙂

How to Make Shredded Beef Sliders for Game Day

  • Season a 4-5 pound chuck roast with salt and pepper and sear on all sides in a large, hot heavy bottomed Dutch oven (I use this one)
  • Sauté some onions, add a bay leaf or two, place meat back in pot, pour a nice pilsner beer over the top, cover and simmer on very low heat for 4-5 hours.
  • Remove from pot and shred with a fork (and don’t forget to nibble some of the meat while you do this step! You’ve earned it)
  • Add a bit of flour to the juices remaining in the pot to make a gravy
  • Serve with sliced smoked Gouda cheese, french fried onions (either homemade or the ones that come in a can), and of course… Pepperidge Farm® Soft Slider Buns!
  • That’s it! It might take awhile to cook the meat, but it’s super easy (see full recipe below) and the smell coming from your kitchen all day is amazing!Beef Sliders Sandwich Shot

Instructions
  1. Heat Dutch oven pot over high heat. Liberally salt and pepper Chuck Roast. Add Olive Oil to hot pot, then sear roast on all sides (about 2 minutes per side). Temporarily remove roast from pot.
  2. Add sliced onions to the Dutch Oven and cook over medium high heat for a 3-4 minutes until soft. Sprinkle with salt and pepper. Place roast on top of onions. Add bay leaves and pour beer over beef and bring to a simmer. Turn heat down to low and tightly cover. Cook on a low simmer (covered) for 5 hours, until meat easily shreds.
  3. Remove meat from pot (keep the juices in the pot) and shred with a fork, removing any remaining fat. Add more salt and pepper if needed for taste. Sprinkle flour over juices remaining in pot and whisk until fully incorporated. Bring to a simmer and cook until slightly thickened. Add shredded meat back to the pot and stir.
  4. Set out Pepperidge Farm Slider Buns, sliced Gouda cheese, and fried onions. (Condiments like mustard and horseradish are also great!), and let people build their shredded beef sliders masterpiece! Don't forget to serve with a cold pilsner beer!
