Sausage Pumpkin Pasta – Fall Camping at its Best

  1. At Home: Cook pasta according to package directions to al dente in heavily salted water. Drain, rinse, and drizzle with 1 Tablespoon olive oil. Cool and place in zip top bag and bring to the campsite.
  2. At Campsite: In a large pot heat oil over medium high heat. Add onion and cook for 2-3 minutes, then add garlic. Stir frequently. After garlic cooks one minute, add sausage to pot. Crumble and brown until fully cooked, approximately 5-7 minutes.
  3. When sausage is cooked, sprinkle with flour and stir constantly for 1-2 minutes until flour starts to brown. Slowly add milk, stirring or whisking constantly until well combined. Bring to a boil, then reduce heat to medium.
  4. Add salt, pepper, nutmeg, Pumpkin, and cream cheese. Heat until thick and heated through, approximately 10-15 minutes. Add cooked pasta and stir until combined. Serve in bowls and enjoy! Note: Can also make sauce ahead of time and store in a gallon sized zip top bag. Combine sauce and cooked pasta in large pot at campsite and heat through.
