Quinoa Pilaf with Orzo and the Need for Leftovers
Creamy and satisfying Quinoa Pilaf with white quinoa, orzo, shallots and garlic is filling enough for a hearty side dish or a light main dish! Just make sure to make enough for leftovers!

  1. Rinse quinoa with cool water in a fine colander. In a large pot, heat olive oil and butter over medium high heat until foamy. Add shallots and garlic and cook until shallots are soft, approximately 4 minutes. Add quinoa and orzo, stirring until well coated and fragrant, approximately 1 minute.
  2. Carefully add chicken broth and bring to a simmer. Reduce heat to low and simmer 20 minutes until all the liquid is absorbed. Fluff with a fork and add salt and pepper to taste. Top with chopped parsley if desired.
