Graham Cracker Crust
  1. Crush approximately 8 slabs of graham crackers in food processor to yield 1 1/2 cups crushed. Add melted butter and blend well. Spoon 1/4 of the mixture into the bottom of a plastic wine cup. Press firmly (the bottom of a shot glass works well) and pack on the bottom and slightly up the sides of the cup. Place in refrigerator for 15 minutes to firm up the crust.
Cream Cheese Filling
  1. Blend room temperature cream cheese, sweeteneed condensed milk, lime juice and vanilla extract in a medium bowl using a hand held mixer. (Can use a stand mixer if prefered, or whisk by hand.) Spoon 1/4 of this mixture into each crust-lined wine cup. Refrigerate for at least 4 hours, or covered overninght. Just before serving, top with a sprinkling of crushed grahams or sliced berriers. Grab a cup and sit by your campfire at dessert time!
