  1. Keep steak whole, but slice down about 1/4 inch with a sharp knife diagonally against the grain every 2 inches. Slice in both diagonal directions (it will look like 2 inch diamonds across the surface of the steak. Do this to both sides. It will allow the seasonings to penetrate better. Let the steak rest until it comes close to room temperature.
  2. While the steak is resting, melt 2 tablespoons in a large skillet over medium high heat and add the mushrooms. Stir occasionally until the mushrooms are golden and have released their juices, approximately 8 minutes. Remove from heat and cover until the steak is done.
  3. Heat a cast iron skillet or other pan that can withstand high heat on high then add remaining butter. Be careful, it will sizzle quite a bit. Immediately put the steak in the pan and let sit undisturbed for 4 minutes. Flip steak and sear another 4 minutes. This should give you a medium rare steak that is caramelized on the outside. If you like your steak more done (I don’t recommend that), then leave on another minute or two. Let steak sit a few minutes before cutting.
  4. Slice steak against the grain in thin slices. Serve topped with sautéed mushrooms.
