Easy Weeknight Meal or Camping Dinner – Pork Stew

Raise your hand if you want a super simple, very hearty, easy weeknight meal that’s also a perfect camping dinner (if you’re lucky enough to be heading out for some beautiful Fall camping) that tastes like you spent hours slaving over a stove, but only takes 30 minutes start to finish! Wow! Look at all those hands popping up. Who wouldn’t want that meal?? Let me introduce you to my Hearty Potato Pork Stew – made simple and delicious with Smithfield Marinated Fresh Pork.

Here’s the thing about Fall. It’s beautiful – cool crisp air, orange and red leaves floating down to the ground, hoodies and sweaters make their way into our wardrobes as we all enjoy the evening dips in temperature and the beginning of football season. But it’s also somewhat chaotic. Kids trying to get back into the swing of school, football practice, and soccer. Moms and dads finding the delicate balance between relief that the kids are no longer under foot all day and the craziness that comes with getting back into a routine. All while trying to figure out how to sneak one last weekend camping outing to reconnect as a family.

There’s no better time to rely on an easy 30 minute weeknight meals than Fall. And there’s no better staple ingredient to use than Smithfield Marinated Fresh Pork. There are SO many meals that can be made with this amazingly flavorful, juicy, pre-marinated pork. (It frequented our summer camping table too. A lot!

Username: @TheSpicyApron) And it is how I can put this easy weeknight dinner on the table in 30 minutes. And – even better – it allows us to sneak out of here late on a Friday afternoon for a quick Fall weekend getaway to our favorite campground and still get a hearty, stick-to-your-ribs bowlful of awesomeness in our hands as we enjoy our roaring campfire.

My fresh pork of choice for this Hearty Potato Pork Stew? The Smithfield Steakhouse Mushroom Loin Filet, of course! (Although, the Smithfield Slow Smoked Mesquite Flavor Loin Filet would be pretty darn amazing, too!) This fresh pork stew smells and tastes like you’ve been chopping, mincing, and simmering all day. But this is honestly one of the Easiest. Meals. Ever. (You don’t need to divulge to everyone just how easy it is; it will be our little secret…)

Just how easy is this Easy Weeknight Meal (also perfect for a great Camping Dinner)?

  • Grab a Smithfield Steakhouse Mushroom Loin Filet at your local Walmart (my favorite go-to store for this and nearly all of my camping food and equipment!) Cut into 1 to 2 inch pieces.
  • Mince a little garlic and cut up a couple potatoes, leeks, and a red bell pepper
  • Sear the Smithfield Steakhouse Mushroom Loin Filet pieces, sprinkle with a little flour, then toss in all the other ingredients and simmer in some chicken broth and a can of diced chiles for 20 minutes. And that’s all she wrote! Done! (Make sure to serve it with some crusty bread to soak up all those flavors.)

So, go ahead… get back into the Fall routine. Get the homework schedules set. Fill out all those back-to-school forms. Drop a pretty penny on whatever sport your kid is in. But don’t forget to spend quality family time together. Now you have no excuse – sit down together for this easy weeknight meal. Or hook up the camper or grab a couple of tents and head out to the great outdoors to squeeze in one more camping adventure. I’ve got your camping dinner covered! 🙂 Enjoy!

One more thing…. this Hearty Potato Pork Stew makes for GREAT leftovers (well… if you actually have any leftovers). Just drain the liquid, store the delicious pork and potatoes in a zip top bag. Grab a stack of small corn tortillas (also available at Walmart), and have yourself some potato pork street tacos the next day! Yum!! 🙂

Instructions
  1. Heat oil over medium high heat in a heavy bottom pot (cast iron works well, especially if over a campfire or camp stove). Add diced pork and sear on all sides - approximately 3-5 minutes.
  2. Add garlic to the pork and cook another minute. Sprinkle pork and garlic with flour and stir to coat evenly. Add salt, pepper, leek, bell pepper, potatoes and Green Chiles. Stir well. Add Broth and bring to a boil. Reduce heat to medium low and simmer partially covered for 15-20 minutes (until potatoes are fork tender). Add additional salt and pepper to taste. Serve with crusty bread .
