Life is a balancing act. There’s work. There’s fun. There’s family. And if you’re anything like us, you do your best to balance it all. Sometimes the ground gets a little shaky, and footing gets a bit wobbly, but if you’ve got family around for support and fun, life is pretty darn good! It’s kind of like walking a Slackline.

What’s a Slackline, you ask? It’s kind of like a high wire meets a trampoline, but only half the width of a balance beam. And walking on one will make one feel as if he is well over the DUI limit, even if no alcohol has been consumed.  It’s basically a tightrope with some bounce (’cause a stationary tightrope isn’t challenging enough, right?)

It’s about 30 feet long, two inches wide, gets anchored on either end, and is suspended several feet above the ground. Why was I not surprised when my niece brought one to our last family getaway?

Just as life should be balanced, so too should food! There’s healthy. There’s tasty. There’s comfort. And there’s a little bit of spice. It all needs to be balanced. And there’s no better balancing act than hearty, flavorful, comforting homemade chunky chicken noodle soup. With succulent chicken, tender veggies, satisfying egg noodles, and a little kick from a touch of cayenne, this weeknight version will make your house smell like you’ve been slaving over the stove all day, yet give you time to spend with your family, and even enjoy a nice glass of wine as you unwind. It’s that easy!

Not only that, there will only be one pot to clean when it’s all said and done. After a quick sauté of aromatic onions, celery, and carrots in butter, add good quality chicken stock and the spices, then simmer the chicken tenders until cooked through. Remove the tenders to shred, and add the noodles and cook until al dente. Add the chicken back, garnish with Italian parsley, and you’re good to go! You’ll never serve chunky chicken noodle soup from a can again.

Chunky Chicken Noodle Soup

A hearty bowl of this weeknight friendly, healthy, and satisfying chunky chicken noodle soup will bring balance back to your life.

Ingredients

  • 2 tablespoons butter
  • 2 yellow onions, chopped
  • 4 Carrots, sliced (approx 1 cup)
  • 4 Celery Stalks, sliced (approx 1 cup)
  • 8 cups Chicken Stock, good quality
  • 1 teaspoon Dried Thyme
  • 1/2 teaspoon black pepper
  • 2 teaspoons salt, plus more to taste
  • 1 pinch Cayenne, to taste, optional
  • 1 pound chicken tenders
  • 8 oz wide egg noodles
  • 1 lime
  • 3 tablespoons Italian parsley, chopped

Instructions

  1. Melt butter in a large saucepan over medium heat. Add chopped onions, celery, and carrots and sauté until tender, approx 5 minutes.
  2. Add chicken broth, thyme, pepper, cayenne, and salt, and bring to a boil. Add chicken tenders and simmer until cooked through, approx 12 minutes. Remove chicken tenders (make sure to check that they are no longer pink on the inside) and set aside to cool a bit. Add noodles to broth mixture and bring to a simmer. Cook according to noodle package directions until al dente.
  3. While noodles are cooking, shred chicken into chunky bite size pieces. Once noodles are done, return chicken back to pot. Add the juice of one lime and the parsley. Enjoy this bowl of wholesome goodness.
