  1. Cook the macaroni according to package directions to al dente, but add the frozen peas to the boiling pasta for the last five minutes of cooking. Reserve 1/2 cup of the pasta water just before you drain it. Drain the pasta and peas and put in a large mixing bowl. Immediately add Velveeta cheese and mix, adding reserved pasta water if necessary to melt cheese. Cover with aluminum foil to keep warm and to help melt the cheese. (Note: The Velveeta Shreds work well for this dish, but you can also use the block of cheese. Just cube it into one inch pieces before you mix it with the pasta and stir thoroughly).
  2. While the pasta is cooking, heat oil in a large skillet over medium high heat. When oil begins to shimmer, add onion and cook until soft, approximately 5 minutes. Add sausage, breaking it into crumbles as it cooks. Cook until no longer pink, approximately 5 more minutes.
  3. Add oregano, thyme, and red pepper flakes to the sausage and onion mixture. Cook over medium heat for another minute or two, stirring constantly, then add the tomatoes. Turn heat to low and add cream and heat through. Pour mixture over the pasta and peas and stir thoroughly, ensuring all the cheese is melted. Let sit a couple minutes, then serve while still piping hot!
