To Brine the Turkey
  1. Make the brine by putting the 1/4 cup salt, 1/4 cup sugar, and 2 cups of water into a gallon-sized zip top bag. Seal and shake well to mix. Then add the turkey breast. Seal and put in the refrigerator for 2 hours.
To Grill the Turkey
  1. Turn on grill to high heat. Remove turkey from brine. Rinse and pat dry. Smear olive oil and butter all over the skin. Salt and pepper both sides of the turkey breast (don’t be shy with the salt and pepper!)
  2. Place turkey skin side down on the hot side of grill. Sear for approximately 5 minutes. Turn heat to medium high on one side of grill. Turn heat off the other half of grill and move turkey (skin side up now) to the side with the heat off (this will give you indirect heat). Close lid and cook turkey until internal temperature reaches 165 degrees. It is very helpful to have a digitial instant meat thermometer for this. Check temperature after 20 minutes, then check regularly. You should check in several places of the breast (not against the bone though) to make sure you’re getting an accurate reading. When turkey breast is 165 degrees, remove and tent with foil for 10 minutes.
To Cook Turkey in Oven
  1. Place oven rack in lower third of oven and turn oven on to 450 degrees.
  2. Remove turkey from brine. Rinse and pat dry. Smear olive oil and butter all over the skin. Salt and pepper both sides of the turkey breast (don’t be shy with the salt and pepper!) Place skin side up on a broiler pan.
  3. When oven reaches temperature, place in oven for 10 minutes, then turn oven temperature down to 350 degrees. Check temperature after 30 minutes, then check regularly. You should check in several places of the breast (not against the bone though) to make sure you’re getting an accurate reading. When turkey breast is 165 degrees, remove and tent with foil for 10 minutes. Serve with your favorite side dishes!
