Maybe it’s just me, but I used to get a bit stressed when planning and cooking an outdoor meal. It’s hard to manage the temperature of the food. Controlling that flaming box we call a BBQ grill feels a bit like witchcraft. And there’s a lot of running back and forth from the kitchen to the outdoor food area. A lot! It just seems difficult.

The first time I gave an honest attempt at a full outdoor meal was 7 years ago when I first moved back to Arizona. The weather was perfect (as usual), I had family all around, and I had started dating a pretty nice guy. So I went all out and spent the day planning and prepping. I brined the chicken breasts that I was planning on grilling. I spent quite some time working out very complicated and detailed side dishes. And I’m pretty sure I even made dessert (although I can’t even come close to remembering what it was). My family showed up with bottles of wine and huge smiles on their faces. The guy didn’t. I learned a few things that day. I learned that I actually can successfully grill chicken on the bone. I learned that a little prep goes a long way. I learned that it’s WAY easier to plan at least one dish that doesn’t require outdoor cooking. And I learned not to date a self-absorbed-my-life-is-way-more-important-than-yours guy. So what’s the hands-down easiest no-cooking-required outdoor cooking dish? This amazing fresh avocado and tomato salad, of course! There’s one very important piece to the deliciousness of this side dish – everything must be ripe. If it’s not, then don’t make it. (Maybe get store bought macaroni salad instead…? Desperate times call for desperate measures.) And how easy is? Four ingredients. Three steps. Now that’s easy!

  • Dice the red, ripe, juicy, fresh tomatoes and the buttery, rich, creamy avocados
  • Whisk together some olive oil and white wine vinegar
  • Mix everything together

Ingredients

  • 2 Large Ripe Avocados
  • 3 Large Vine-ripe tomatoes
  • 1 Tablespoon olive oil
  • 1 Tablespoon White Wine Vinegar
  • Salt and Pepper to taste, I highly recommend this!

Instructions

  1. Dice the tomatoes into 1 inch pieces and put in a medium bowl. Dice the avocados into 1 inch pieces and add to the tomatoes.
  2. In a small bowl whisk together olive oil and vinegar. Drizzle over the tomatoes and avocados. Add salt and pepper to taste. Now relax and enjoy your evening!
