IP Chicken | Quick and Easy Pressure Cooker Chicken
IP Chicken is one of the most searched Google terms when it comes to food – particularly pressure cooker food! And for good reason. Instant Pot Chicken is one of the most versatile and easy to make food staples around.
There are tons of different ways to make IP Chicken (here’s an awesome Instant Pot Chicken Thighs with Creamy Mushroom Gravy recipe to try out too!) But shredded chicken is the most versatile and can be used in nearly any chicken recipe you want to make!
You can use this pressure cooker shredded chicken to make quick work out of amazing recipes like chicken enchiladas or this awesome White Chicken Chili! And I’ve got a super easy way to shred all that chicken in about 1 minute!
How to Make IP Chicken – Easy Shredded Chicken
Pour 1 cup of chicken broth into your pressure cooker inner pot. Add 1-2 pounds of chicken thighs or breasts (cut into 4-5 inch pieces). Add salt and pepper. Secure the lid and pressure cook for 7 minutes then let sit for another 5. Release remaining pressure and remove lid. Using a handheld mixer, shred the chicken directly in the pressure cooker inner pot (leave the juices in there too!) Start with the handheld mixer on low the gradually increase the speed until all the chicken is shredded to your desired texture. Use in all of your recipes that require shredded chicken! Let’s talk about the actual shredding. I can’t believe I was almost 50 before I learned this trick! (What rock have I been living under??) This is the fun part.
Easiest Way to Shred Chicken
When that IP chicken is fully cooked, open up that lid, grab your handheld mixer and stick that sucker right into the pressure cooker inner pot. Turn the mixer on low to get it going then gradually turn it up a few notches. And watch that chicken shred like magic! It takes less than a minute. Genius! (I still can’t believe I didn’t know this trick earlier…)
Now that your chicken is nicely shredded, full of moisture from the liquid that was left in the pot, just use it as needed for whatever chicken dish you’re making.

Ingredients
- 1-2 pounds chicken breast or thighs, boneless/skinless
- 1 teaspoon salt
- 1/2 teaspoon Pepper
- 1 cup chicken broth, can use water
Instructions
- Cut chicken into 4-5 inch pieces and season with salt and pepper. Pour chicken broth into pressure cooker inner pot and add chicken. Secure lid, turning the valve toward sealing and pressure cook on high for 7 minutes. When the cooking cycle is complete, let sit another 5 minutes.
- Release remaining pressure and remove lid. Using a handheld blender, place beaters directly into the cooked chicken and turn onto low. Gradually increase speed to fully shred the chicken. Removed cooked and shredded chicken from pot and use in all your chicken recipes!
Did u know u can uses a Large Black Metal Clips to hold the pot in place in the instant pot from spinning around as u are stirring thing on the saute mode. U can buy the clips at a Office Max or WalMart or any office store.
